The Best Tortilla Soup Recipe

Dave and I had an amazingly busy weekend this past week. On Saturday, I had two portrait sessions and an event to photograph, and then traveled to Baltimore for the rehearsal for the wedding we would be photographing the next day. Sunday began at 7am for us, because we volunteer at our church and because we’re a mobile church, it requires a ton of set up to make everything looking great. From there we drove straight to Baltimore for Lauren and Andrew’s wedding so we could be there early to scope out locations and lighting for pictures. All of that took a toll on us, and by Monday morning Dave and I were both pooped, sore, and a little sick. And I don’t know about you, but all I want when I’m sick, tired, and its cold outside is some warm, slightly-spicy soup. So tonights dinner consisted of the following ingredients thrown together into a crockpot to make slightly-spicy tortilla soup. I promise, you will not be sorry if you make this. Its amazing and easy-ish and is extra yummy when youre sick and tired and its cold outside. I gourmet-ed it up a bit, but you can really make this as simple as you want and it will still taste awesome.

Directions: Throw the following ingredients into a big crockpot:
one can of diced tomatoes with green chiles, one can of corn, one can of baked beans (dave doesnt like beans-so these are a small tasty version that he doesn’t mind-otherwise you could add black or pinto beans), a packet of Goya Sazon seasoning (i like the azafran version), 1/4 jar of herdez mild salsa (any brand of jarred salsa would do-but herdez just tastes so much better and fresher), 1/4 packet of velveeta Mac n’ cheese sauce (just had this left over from the last time we made mac n’ cheese because i dont like using all the cheese-so this isn’t necessary-but gives it a creamy texture instead of a broth texture), 4 T of corn flour/masa (not necessary but adds a nice subtle flavor and thickens it up so the soup can go further-and its really cheap), one rotisserie chicken pulled (could use chicken you’ve cooked, or canned chicken-but rotisserie just makes this soup taste so much better, 1/4 yellow onion diced, 2 carrot diced, 4 cloves garlic, 1 green pepper diced, sprinkling of Goya adobo seasoning, sprinkling of chipotle powder, one box of low sodium chicken broth, however much water you need to turn all of that into a soup consistency. .. With homemade corn tortilla strips (just cut up corn tortillas into strips-spray with a little cooking spray-add seasoning if you like-and stick in the toaster oven for a little while-flip them around-and cook a little bit more), thinly diced red onion, diced avocado, mexican cream (sortof like sour cream) and crumbled cojito cheese (crumbled feta would taste similar, or you could use just regular grated cheese), cilantro torn up, and a slice of lime on top.
